Yana Gilbuena

Yana Gilbuena, a Filipino born, global nomadic chef, started Salo Series to share the vibrant food culture of The Philippines with the world. The Salo Series hosts Filipino Kamayan dinners where food is served on communal tables covered in banana leaves and guests are asked to eat with their hands. Gilbuena focuses on regional and traditional dishes from the three main regions of the Philippines: Luzon, Visayas and Mindanao, which not only preserves the culinary heritage within the global filipino diaspora but also shares it with others outside of that community. The pop-up aims to reframe the narrative of the aftereffects of colonialism in filipino food and culture by dismantling and challenging the western constructs of dining. It also aims to reclaim the food traditions buried in shame by colonialism by highlighting the simple daily food rituals from the islands, such as eating with hands. Gilbuena aims to use these dinners as a platform to build community from the four corners the dining table. She also wants world peace.
